Since Jesus believed Adam and Eve were real people, shouldn't Christians follow his lead and do the same?

No, it just shows that on this matter, he was a man of his culture and his times. The fact that he was mistaken about this is evidence he is not God.
My theological positions:

-God created us in His image, not the other way around.
-The Bible is redeemed by it's good parts.
-Pure monotheism, simple repentance.
-YHVH is LORD
-The real Jesus is not God, the real YHVH is not a monster.
-Eternal life is a gift from the Living God.
-Keep the Commandments, keep your salvation.
-I have accepted YHVH as my Heavenly Father, LORD and Savior.

I am inspired by Jesus to worship none but YHVH, and to serve only Him.

Theologically liberal Christians believe that the human Jesus was a man of his times, and that the Garden story was their cultural myth. Although he may have known the the mind of God on Spiritual matters, he also had human limitations, and most probably would not have known what was going on in China at the time, nor would he have known about rocket science.

The human Jesus was not omniscient, and could not have been blamed for accepting his cultural myths as literal.

Yes. That's why I am a bible literalist.

People seem to have no problem believing in God but in the next breath they doubt everything from creation onwards that He said He did.

This includes people that believe that Jesus is not God.
Proverbs 18:17 The one who states his case first seems right, until the other comes and examines him.

Well I don't believe Jesus is God but I do find it difficult to see why people believe God can create the universe out of "nothing" but cannot create two human beings out of dust.

I say that Jesus referencing the old scriptures does not mean that Jesus preached them as being literally real and true.

Matthew 19:4 And he answered and said unto them, Have ye not read, that he which made them at the beginning made them male and female,

He referenced reading the scripture, Jesus did not say = Do not ye know this as true ...

We could ask similar as like = Do ye remember what the Wizard told to the Cowardly Lion?

As such we would be asking a true question but we would not be saying that the Wizard or the Lion were a real story.

I suspect that Jesus viewed the scriptures in the same way as we do today - by seeing metaphors as metaphors and seeing the symbolism as symbolism and taking the literal parts as literal parts.

Jesus got it right, and Jesus expressed it correctly - but whether you view it as true or not is up to you.
