The question is whether the Sabbath which came the next day was a Saturday Sabbath or the Passover Sabbath or both. I believe that all the evidence is unanimous that Jesus was crucufied on the day before the Passover. Matthew confirms this, as in Matthew 27:62 he says that the day after the crucifixion was the "one after Preparation Day" (ie preparation day for the Passover.
And John has no Eucharist account at the last supper.

What we are told is he would be dead three days and three nights, he would rise on the third day, and he had already risen when the angel spoke to the women at daybreak on Sunday.

The main reason is the use of "day" in two (or three) ways.
Thus, "day(with night, 24 hours)"; "day(without night, daylight)".
Further, when does a day(with night) start and finish?
God said in Genesis 1 "evening and morning", which is why I said, "the third night would take him into the third daylight".
