When I learned that the Bible speaks of a restored Garden of Eden and the restoration of mankind to the perfection and endless life that Adam forfeited, I was thrilled. Who doesn't want to keep living on this beautiful earth, with our loved ones, and being able to do all the things we love to do---endlessly?
If God said to you today, "When do you want to die?" would you say "now!!"? I don't think very many people would say that.
We CAN live forever here on Earth. The Bible tells us that we can.

So there will be all these fruit trees and animals enjoying them. There will be oceans and beautiful mountains; Do you think any of the righteous living on the earth will be able to climb the mountains to enjoy the view or swim on the prestine oceans or lakes?

I think this is a misunderstanding of what a spirit body truly is. My Lord was able to materialize and dematerialize; move between walls... and He was also able to be touched, to be seen (he was even able to eat food). Angels also can move from energy to matter; from matter to energy. Three angels spoke and ate with Abraham; two of them went into Sodom and Gomorrah and stayed with Lot. One was seen with the three prophets in the fire, from Daniel.
A spirit body, represented by the white robe, has only life in it, but no sin or death in it. As opposed to the long garment of skin that was given to Adam to cover him, and that we inherited from him, that has sin and death in it. Hence, this flesh and blood gets sick and dies and cannot inherit the Kingdom of heaven.
We will change from the old body (the long garment of skin that we currently have) into the new body (the white robe), and so we will be able to follow the Lamb wherever He goes.
But the new body is still a body - it is not just some ethereal floaty thing.

So, in Paradise---the literal, physical paradise that will envelope this planet forever (Psalm 37:29)---its citizens will be spirits, right? I still don't understand why these spirit people are not just purposed to live in heaven where God and all the angels are---the spirit realm---and not have their primary home be on Earth. Why didn't God just create everybody to be angels in the first place, and not bother with the physical planet?

Your question does not follow my explanation about the new body. Just because a person may access the spiritual realm does not mean that such a person is now some kind of 'ghost'. I urge you to re-read.
In the paradise of God (Rev 2:7) - which was separated from the earth but will once again be upon the earth (with the tree of life - Christ - in her midst) when the Holy City comes down out of heaven - those who enter will have a new body, one with no sin or death in it.
But her citizens will still be people.
Just no longer in a body that has sin and death in it (that we inherited from Adam after he ate from the tree of knowing good - life and bad - death) Before Adam ate and was subsequently cast out of the Garden of Eden, he could move in and out of the spiritual realm and eat from the tree of Life. We will be able to do what he could do in the beginning. Just like the angels can do (as Christ said that we would be like the angels and also that we would eat the bread of angels; and He also said that His sheep would come in and go out, and find pasture. John 10:9)
Those in the Kingdom receive the new body - described as the white robe - that has life in it.

Why is that hard to understand? Was the earth not given to man? Is the dwelling place of God not with man (as opposed to the dwelling place of man with God)?
Why didn't God just create everybody to be angels in the first place, and not bother with the physical planet?
What is wrong with the physical planet - except for the curse that Adam brought to it because he let sin and death into the world? But won't that and every curse be removed, and every enemy destroyed, including the last enemy?
What will be left except for a planet that has life on it? A physical realm that has life in it? A gift from our creator?

We are humans, so yes... but I said people because Christ also is in the Kingdom (as the King, as the Tree of Life), and he is more than just human. Though I understand that owh was asking me about what mankind will be.
